Root Vegetable Medley
Ingredients:
2-4 carrots Cut into 1-1½ chunks
3-4 medium sized beets Cut into wedges
1 lb squash or sweet potatoes, parsnips Cut into 2 inch chunks
½ onion Cut into chunks
½ cup melted butter, avocado oil or preference of fat
2 tbsp honey
2 tbsps of herbs of choice(thyme, rosemary, sage…) Rough chop
Salt and pepper
Instructions:
1. Preheat oven to 375 degrees Fahrenheit
2. Line a baking pan with parchment paper or foil.
3. Cut root vegetables as follows and put into a mixing bowl.
4. Add 2 tbsp chopped herbs of choice into the mixing bowl.
5. Season with salt and pepper.
6. Add tbsp honey and melted butter into the mixing bowl. Use a spatula or spoon to mix thoroughly so the honey, melted butter, and herbs are distributed evenly.
7. Transfer the vegetables to the prepared baking sheet and spread roughly evenly.
8. Bake in the oven for 40-45 minutes into vegetables are tender.
9. Allow the vegetables to cool before transferring to a serving dish. Drizzle with more honey if desired and sprinkle some flaky salt or regular salt if desired as well.
